The Best Ever Beet Salad

One of the hazards of living under the same roof with me is you never know just what youre going to come home to. 

There is a good chance of coming home to me napping on the dog and just as fair a chance I will come running at the fella to insist he taste whatever thing it is that Im cooking.  But every once in a while just to remind him that he lives with a crazy person he will come home to me doing something absolutely nutty with food. 

On this particular evening he came home to me yelling from the kitchen “Hey honey come in here and take a picture of this, its awesome.”  He knows enough to enter rooms with a certain amount of trepidation when Im talking to the food so who knows what he thought he was getting into.  Its been a while since I shaved celery so he probably thought he was safe.

“Doesnt this look like a bowl of guts?  And its purple!”  I said with glee in my voice while thrusting at him  this giant bowl of shredded beets that did indeed look rather grotesque and bloody.  The fella took some pictures while keeping a safe distance from my mess, all the while giving me the face reserved for moments when you wonder what youve gotten yourself into and how soon you get get out of them.

The fun of making this meal however doesnt end there, the best thing about these shredded beets is they were about to get even more interesting.  Did you know that when you add tahini, yogurt and lemon juice to beets not only do you get an amazing salad but the beets turn the most unbelievable shade of magenta?  And there are few things I love more than eating purple things so you can only imagine how many times Ive submitting the men in my life to this beet creation since I discovered it.  I mean what is not to love?  It is easy, very tasty and almost painfully good for you.  Thank you once Mark Bittman, master of the exciting salad!

If you dont enjoy being purple as much as I do borrow a child or a food processor attachment that will do the dirty work of beet shredding for you.  But believe me when I say this salad is worth the mess.  And it goes particularly well with some chicken thighs or bone in chicken pieces dredged in zatar seasoning and put in the oven until cooked through.  A dash of salt and pepper on the chicken and you have a richly flavored bit of chicken that took no effort.  This is my new favorite meal, I never imagined falling in love with beets like this.


What kind of wine possibly pairs with this crazy meal?  Um, who cares I was in the mood for Torrontes the Norto being a delicious but subtle tangy tropical fruit bomb with just enough bit to make it interesting but such well balanced fruit its a little to easy to drink.  And at about $10 it is a great value.  Ill save the pricey but amazing Michel Torinos Don David also known as the best Torrontes for a special occasion and gladly stick to the Norto for a weekday dinner.

These three things came together better than I could have hoped and made for a small Middle Eastern tinged food vacation.  Just what I could use in the middle of a winter that seems like it will never end. 

So dont give up on beets until you give a try to this salad or Lindsays orzo dish up over on Forkful of News.  They are both so tasty you will forget you are eating vegetables.  And while youre over there check out my article about Argan oil, a crazy little known oil that just might change the way you cook.  Its worth clicking on especially if youre having a bad day, if only to look at the pictures of tree climbing goats.

Best Ever Beet Salad


3 large beets, peeled
1/2 cup yogurt
1/2 cup tahini
1 tablespoon lemon juice
1 tablespoon zatar seasoning

Grate the beets by hand or with a food processor and then place in a large mixing bowl.


Whisk together the yogurt and tahini in a separate small bowl.  When well combined add lemon juice and zatar seasoning and stir well.  Toss the yogurt mixture into the grated beets.  Sprinkle with salt and pepper is desired.

New Recipe for Turkey Burgers!

Day 166 here and feeling better about my food choices this week.  Last night I ran into a recipe (on the back of a package of frozen turkey burgers no less) that I think a lot of people would like.  AND it uses ingredients that may already be in the house from making the avocado salsa chicken!  I did some tweaking, as usual, and came out with a recipe that makes frozen turkey burgers into a gourmet meal.  I call them... wait for it...

TEXI-BURGERS (As in Mexican flavor turkey burgers!)
makes 4 servings

4 Jennie-0 All Natural Turkey Burgers - Made from Lean White Meat
4 slices reduced fat cheese (American or cheddar recommended)
1/2 ripe avocado, thinly sliced
1/2 cup fresh salsa (such as Natures Promise medium organic salsa)
1/4 cup fat free sour cream
2 Tbsp taco seasoning

Grill turkey burgers according to package instructions.  While grilling, mix together sour cream and taco seasoning.  If you dont have pre-packaged taco seasoning on hand, heres a great recipe that I used to make it from scratch (except I left out the crushed red pepper flakes because I dont like them):  All Recipes Taco Seasoning I Recipe.  When turkey burgers are fully cooked, add 1 slice of cheese (approx. 1/2 oz) to each burger then remove from grill when melted.  Top each turkey cheeseburger with taco sauce, sliced avocado & 2 Tbsp salsa.  Voila, Texi-Burgers!  Can also be served on a kaiser roll for those not concerned with carbs. 

This is a great recipe for using up the other half of an avocado and some of the salsa leftover from making the avocado salsa chicken.  I guess Ive been on an avocado kick lately!  Last night I made these with Land O Lakes American cheese slices because we always have it in the house for my husband (and the dog).  So mine last night was 160 calories from the burger, 50 calories from the cheese (would be less using reduced fat or 2%), <5 calories from salsa, ~40 calories for <1oz avocado, and ~25 calories for the taco "sauce" - making my whole burger a total of 280 calories.  Of course, I counted the avocado toward my "healthy fat" for the day and since I had my burger on lettuce instead of a bun, I counted the two lettuce leaf pieces and salsa as one of my vegetable servings for the day.

I actually cant wait to have these again!

Aduki Burgers



This is a simple but interesting meal full of protein and sure to fill you up without having to do something as silly as turn on the oven during these increasingly warm evenings. You know me by now though, any excuse to sneak curry powder into something and Im all over it. The spices and cilantro do make this a nice twist on the same ole tired bean burger. Through in some spinach, tomatoes and whatever sauce strikes you at the moment and youve got a flavorful dinner.

Aside from banishing the forbidden pita pocket all I did to change up this recipe was to substitute in almond flour for the original whole wheat. The problem this caused was slightly too gooey to brown patties. You can fix this with more almond flour or more oil to cook it in to make sure they dont stick to the pan. Either way works but the more flour method leads to drier crumbly patties.

I browned up some cauliflower and fennel to serve on the side and had a quick satisfying meal.

Aduki Burgers

2 15-ounce cans aduki beans (or light red kidney beans, drained and rinsed)
1 1/2 teaspoons curry powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 cup fine ground almond flour
1/4 cup cilantro leaves, chopped
1 large egg, lightly beaten
2 teaspoons oil

Accompaniments: sliced tomato, baby arugula (or other greens of your choice), chutney

Place the drained. Rinsed beans in a large bowl and roughly mash with a fork or potato masher. Add the curry powder, cumin, coriander, flour, cilantro, and egg. Shape mixture into small round patties.

Heat oil in a large non-stick or cast iron skillet over medium heat. Add half of the patties to the pan and cook for 3 minutes on each side or until golden brown and cooked through. Remove from the pan, drain on paper towel and halve each patty. Repeat with more oil if needed and remaining patties.

Serve with sliced tomato, arugula, and store-bought chutney for a filling salad.
