Fennel and Apple Salad

Salads dont get any easier than this. Even better it has no pesky lettuce in it so it will even please you lettuce haters out there. This has become my new go to recipe for using fennel, which I usually dont love raw. But between the sour apple and the mustard the fennel becomes much less intense and works to bring together all the flavors nicely.

My other recent discovery was this Shiraz and Mourvedre blend from Penfolds. It manages to be rich, dry, and just fruity enough all at once. And for $11-ish a bottle it drinks like a much pricier wine. Ive had to resist the urge to open a bottle of it every night this week.


Fennel and Apple Salad

1 bulb fennel, sliced thin
1-2 tart green apples (depending on how big your fennel bulb is), sliced thin

1 tablespoon olive oil
1 tablespoon apple cider vinegar
1/2 tablespoon mustard

parsley


Slice very thin equal portions of fennel and tart apple and toss in a bowl.

Whisk together oil, vinegar, and mustard then toss over salad.

Top with parsley.

Masters of Science in Gerontology

It took me pretty much six years to do it, but Im so proud of myself and can finally say I completed my Masters in Gerontology Degree!!! And it feels so good!


And even though it has been over a month since I did any kind of school work I still find myself panicking at times about what assignment I have due next! 


Truly though, its a great feeling to having nothing to worry about except planning for a new member of our family.

Whole Baked Trout with Fennel

This is a great meal to use should you need to impress someone without having the time to put tons of effort in to it.  Because nothing says "fancy" like serving someone a whole fish.  It seems complicated and complex but in actuality couldnt be easier.  Of course if youre squeamish about whole fish or know someone who is this probably isnt for you.

The fella surprised me by making this for dinner one night when we were having a friend over.  We were both quiet impressed and blown away by the presentation.  And this is a great way to prepare fish, it comes out at a perfect level of doneness so that is is flaky but very moist and flavorful.  The next time we made this dish I helped prepare it and realized just how easy it is to make and became an even bigger fan of this meal.

You can use any whole white fish, herbs and veggies you like.  This is just what weve come up with.  If you have any other combinations you find that you like let me know.

Whole Baked Trout with Fennel

3 tablespoons oil
2 whole trout, gutted
1 bulb fennel
4 sprigs fresh thyme
1 lemon, sliced
salt and pepper, to taste


Grease the bottom of a baking dish large enough to fit the fish using the oil.  Liberally salt and pepper the inside of the fish and place into dish.

Cut the fronds off of the fennel bulb and put half of the fronds into the cavity of each fish.  Cut the fennel bulb into 1/2 inch thick chunks and scatter around the bottom of the dish around the trout.  Salt and pepper the fennel.  Place 2 sprigs of thyme inside each fish.  Divide the slices of lemon between the fish and place in the cavities.

Place in over for 15 minutes.  Check for doneness by poking thickest part of fish with a knife, if the knife goes easily through the flesh the fish is done and ready to eat.  If the fish isnt cooked through put in for another 5 to 10 minutes at a time until it is cooked to your preferred level of doneness.

Remove fennel fronds, thyme, and lemon from inside fish and serve with roasted fennel bulb.

Vegetarian Crockpot Chili

Its been a busy week so there has been a lot of crockpot action going on in my kitchen.  Yesterday the fella threw this chili together for about the millionth time and I couldnt believe I hadnt written about it yet.  Its tasty and a great low fat/high protein meal. 

Aside from the basic seasoning and the inclusion of beans you could add whatever you have in the kitchen to this recipe to create whatever chili youre in the mood for that particular day.  Its a very forgiving recipe and beans hold up great in the crockpot so you really cant go wrong.  If you dont like spice you could skip the chipotles or go for a milder jalapeno.  Feel free to use whatever combination of beans you have around.  We used kidney and cannellini beans since we had a bunch left over from the pottage earlier in the week (Im terrible at estimating how many dry beans to cook in order to get the amount of beans I need for a recipe.)   But were also fond of a combination of black beans and chickpeas.

I like to top this with a little sour cream or yogurt and cilantro to add a little something extra to it while still sticking to the vaguely southwestern theme.  But if you wanted to be naughty some melted cheddar cheese on top would be amazing.  So go crazy and treat yourself to a meal  that cooks while youre at work.


Vegetarian Crockpot Chili

2 tablespoons oil
4 cloves garlic, minced
1 onion, chopped
1 teaspoon crushed red pepper flakes
1 teaspoon cumin 
2 tablespoon chili powder 

2 teaspoons oregano
2 tablespoons soy sauce 
1 28-ounce can tomatoes (or about 1 pound fresh tomatoes chopped) 
2 cups vegetable broth
1 6-ounce can tomato paste 
2 chipotles with some of their sauce, chopped
2 14-ounce cans black beans, drained
2 14-ounce cans red kidney beans, drained
salt and  pepper, to taste 

sour cream or yogurt, as topping
cilantro, as topping

    Sautee the onion, garlic and red pepper flakes until the onion is soft, about 3 to 5 minutes. Add the chili powder and cumin and cook for two more minutes. 

    Place the onions along with all the remaining ingredients, except sour cream and cilantro in the crock pot, stirring to combine.  Cover and cook on low for 6 to 8 hours.

    Top with sour cream and cilantro just before serving.

    Leek and Fennel Coulis

    This simple but flavorful sauce is a great addition to just about anything. Fish, chicken, veggies or pasta with the addition of a little Parmesan. When Im having a lazy menu making week I whip up a full recipe of this and use it to top a low maintenance piece of meat and then later in the week when I have zero time to cook I toss it over some pasta. Recipes like this keep me sane when Im working too much because the only thing worse than working two jobs is not eating well and trying to make it through the day.


    Leek and Fennel Coulis

    1/4 cup olive oil
    2 leeks, white part and two inches of green part, chopped
    1 fennel bulb, finely chopped

    1 tablespoon fresh thyme, finely chopped
    3 cups baby spinach, roughly chopped

    1 cup coconut milk
    1/4 cup olive oil

    Heat olive oil in a large skillet. Saute leeks and fennel for 6-8 minutes until soft. Stir in thyme and spinach and cover skillet for 2-3 minutes until spinach is thoroughly wilted. Remove pan from heat and stir coconut milk into mixture

    Transfer mixture to a food processor and puree on highest speed until smooth. While food processor is running on medium speed, slowly drizzle in olive oil.

    New Years Eve Gluten Free Pizza Party

    I spent New Years Eve doing all of the things I liked doing most in the year that came before which is what I hear youre supposed to do for a successful new year.  Not the least of these things was spending a ridiculous and enjoyable amount of time in the kitchen cooking with the chef while the fella supervised.  We decided to do a gluten free pizza party and it was splendid.  I worked with two crust recipes Ive tried before with interesting toppings and the chef to my great pleasure tried something purple.
     
     Almond Flour Zatar Pizza

    The first crust was the much loved almond flour variety that the fella and I have been making off and on all year.  I found out totally accidentally that it comes out it a much better crust texture if you half the recipe and go for a mini sized thinner crust. 

    Once the crust was par baked I used a pastry brush to slather it with oil from the huge jar of sun dried tomatoes I always have in the back of the fridge.  Then I sprinkled it with my newest obsession, zatar seasoning.  I added, a wee bit of feta, some grape tomatoes, and marinated artichokes.  A couple more minutes in the oven and it was amazing.  This was simple but my favorite pizza of the evening,  I will be making this again many time over.

     
    Flax Seed Crust with Roasted Veggies

    Next up for turning the flax seed focaccia recipe into a crust which worked out pretty well.  I halved that recipe too so it would fit into a well greased cake pan.  The only problem was once it had moist ingredients and melted cheese on it, the crust got a little too wet.  We decided it needed to cook longer or be cooked once, refrigerated, toasted in the oven and then decorated with toppings.  This situation will obviously require more experimentation.  Oh darn.

    On this pizza I wanted to do something more traditional.   So I put some left over pasta sauce on it, roasted some veggies, threw on some sun dried tomatoes and covered it all with mozzarella and baby portabellas tossed in balsamic vinegar.  It was tasty but the slightly too wet texture of the crust was a bit of a turn off so it wasnt our favorite.  The crust did do a good job of imitating the taste of a hearty whole wheat type crust though so Ill continue to play with this one until I get it right. 

    Purple Rice Flour Crust

    The chef will have to explain to the world what he did the create the purple rice flour crust.  All I know is it was very yummy and while it was cooking it looked like the surface of the moon and he has the pictures to prove it.  So lets all bother him until he posts about that.

    What I do know was that the crust had a really nice texture right out of the oven but suffered from sogginess as it cooled.  So this crust will require more experiments before its perfect as well.  With roasted eggplant, Parmesan, fig vinegar, and a goat cheese red wine reduction sauce it was as near to perfect as I could hope for something that pretty to be. 

    Leatherwood South African Cab 

    The only disappointment of the evening was the wine I picked.  In my defense my boss at the wine store I work at raved about it saying it was the best Cab in the store in the $11 to $15 range.  He almost always has impeccable taste so I believed him, needing something big and tannic to hold up to a bunch of pizzas.  Sadly it was a watery very blah wine.  You know the kind of wine Im talking about--its fine, not bad but not good.  It just tasted like wine it had nothing going on in it. 

    Happily after dinner we were off to Lindsays to have more sparking wine cocktails than most people could possibly imagine.  That helped me to forget the very so so wine.  And we got to confuse our friends by serving them the pizza left overs.  I did have to bow out to go to bed early, having a low key ringing in the new year with the dog and my favorite guys.  But I couldnt have been happier doing it.  All in all its been my favorite new years even so far.  If you ask me all the other holidays could be improved with pizza.

    Sorrel Quiche

    Its CSA season again.  That means its spring (yay no more snow!)  And it also means weekly confrontations with vegetables you have never seen before.  Sorrel? Ramps? Nettles? Say what?  I find it extremely exciting to hunt down recipes for these new vegetables, its like a treasure hunt than ends in a great meal.

    This year the fella and I werent able to go for a CSA since well very likely be moving out of state in the next couple of months and didnt want to abandon our box of veggies halfway through the season.  Instead the fella has been enjoying going to the farmers market each Saturday and playing a little game called "stump Emily with wacky produce."  The star of the first episode of this little adventure was sorrel.  Its in a lot of French recipes but what do you do with it when you have a grocery bagful?  Thats a very good question to which I answer; quiche!

    But if youre on my site youre either on a low carb diet or just enjoy my typo ridden recipes and Im gluten free so how do you make a tasty crustless quiche?  In this case covering the bottom of the pie plate with goat cheese worked out nicely as a crust substitute.  In fact this recipe was just all around fabulous and easy.  If you dont have sorrel go for spinach.  And if youre avoiding cow milk cheeses here is a fun tip: ground raw cashews taste very similar to Parmesan so its a great thing to sprinkle on quiche or pasta without the unpleasant lactosey side effects.

    Sorrel and Goat Cheese Quiche

    5 ounces chevre
    3 cups sorrel, coarsely chopped
    1 handful scallions, chopped
    4 eggs
    1 1/2 cups soy milk
    1/4 teaspoon salt
    1 handful ground cashews (or Parmesan cheese)

    Preheat oven to 375 degrees. Spread goat cheese (or any strong flavored cheese) in the bottom of a well greased pie plate.  Cover with chopped sorrel and scallions. Beat eggs, salt and milk together. Pour over greens. Sprinkle with ground cashews. Bake for 35 to 40 minutes or until top is golden brown.
