Slow Cooker BBQ Ribs

Guys! I have been cooking so much lately that I havent had time to post all my meals to the blog. Im going to try to get caught up so you all can see how amazingly well my husband has been eating :) This one that your about to see was good, but Im not a huge meat eater so it wasnt anything special to me really. However, my thoughts dont really matter to me... its Dan opinions that count.

Slow Cooker BBQ Ribs (www.budgetbytes.com) $10.98

Ingredients
  • 1 med yellow onion
  • 1 rack (2.5 lbs.) pork spare ribs
  • 18 oz. bbq sauce
  • 1 cup apple sauce
  • ½ cup apple juice
  • to taste salt and pepper

Thinly slice the onion and place it in the bottom of the slow cooker.

Cut the ribs into two rib portions. Season with salt and pepper.

Arrange half of the ribs in on top of the onion in the slow cooker. Cover with half of the BBQ sauce.

Place the rest of the ribs on top and cover with the rest of the BBQ sauce.

Pour the apple sauce and apple juice in around the edges of the ribs so it fills in the spaces between meat without washing off all of the BBQ sauce.

Secure the lid tightly on the slow cooker, turn on low heat and let cook for 8 hours. When the ribs are done, carefully remove them from the pot. They will be very tender and can fall apart easily so lift gently.

Fish out the onions and serve on top of the ribs.

Dan rated this meal a 4 out of 5 stars. It was good and easy, but not something I would crave.

Extreme Weight Loss Diet Not For The Faint Of Heart

Is the meaning of the word extreme considered negative or positive? I guess it depends on the perspective of the person. At any rate, anything that is extreme should only last for a short period. Something that is extreme keeps its thrill when it is short lived and not frequent in occurring.

An extreme weight loss diet should be kept in those bounds. Extreme weight loss diets are considered to be a jump start to a regular diet. Careful consideration should be used to determine how long an extreme weight loss diet should continue.

Are extreme weight loss diets effective?
The answer is, yes! An extreme way of eating usually involves eliminating certain types of food in your daily meals. The types of foods that are eliminated are considered food for fat cells or interfere with proper digestion.

Extreme Weight Loss Diet Examples:
*Cut out sugar. Simple sugars are an excellent source of food to help fat cells grow. Foods that contain simple sugars are candy, ice cream, soda beverages, and desserts with added sugar. Also, refined carbohydrates like white bread and rice are easily converted into simple sugars when digested. Most processed food has sugar or glucose added. Remember to check labels. Even ketchup has sugar.

*Cut out carbohydrates. Most carbohydrates are considered simple sugars. When broken down in the digestive tract, they convert into glucose and affect blood sugar levels.

*Cut out fat. Well, not completely. There are healthy fats that your body needs. The type of fats to avoid are trans fat and saturated fat. Saturated fat comes from animal products. Trans fat are made from oils that are partially hydrogenated. Healthy fats are monounsaturated, polyunsaturated, and omega-3 fatty acids. Monounsaturated are found in foods and oils. Polyunsaturated is mostly plant-based. The Omegas are found in fish.

*Cut out calories. Counting calories eaten in every meal and snack, can burn fat cells quickly when you are consistent and accurate. Calories should be adjusted to activity levels.

*Cut out toxins. Doing a detox diet can flush out unwanted undigested food and parasites. Detoxifying uses plenty of water which is very good for healthy systems and cells. Bloating will cease and your body will be better prepared to accept and absorb nutrients. The nutrients will then assist your metabolism and lower fat cell production.

To be successful in using one of these diets, be consistent and drink plenty of water.

What is Food Pyramid

Use Sparingly: Fats, oils, and sweets
2 - 3 Servings: Milk, Yogurt, and Cheese Group
2 - 3 Servings: Meat, Poultry, Fish, Dry Beans, Eggs, and Nuts Group
2 - 4 Servings: Fruit Group
3 - 5 Servings: Vegetable Group
6 - 11 Servings: Bread, Cereal, Rice, Pasta

The Food Pyramid published by the USDA makes it easy to envision just how much of each food type you should eat. Each section of the pyramid represents a food group; the size of the group corresponds to the number of recommended servings.

1. The base of the pyramid represents the grain group. These are carbohydrate-rich foods like bread, cereal, rice, and pasta. You should eat six to 11 servings per day of these foods.

2. The next tier of the pyramid includes vegetables and fruit. You should eat three to five servings per day of vegetables and two to four servings per day of fruit. These are good sources of vitamins, minerals, and fiber.

3. The next level is protein, like dairy products, meat, poultry, fish, dry beans, eggs, and nuts. You should eat two to three servings per day of foods from the milk group and two to three servings per day of foods from the meat, egg, bean, and nut group.

4. The top level of the pyramid is fats, oils, and sweets; these should be used sparingly.

The pyramid calls for eating a variety of foods to get all of the nutrients you need, and, at the same time, the right amount of calories to maintain a healthy weight. If youre watching your weight, eat the minimum number of recommended servings. If you need to gain weight, eat the maximum number of servings. And, keep in mind as to what constitutes a serving. Most serving sizes are smaller than you think. Be sure to read the food labels carefully to determine the accurate portion size.

Simple Lamb Curry

Im apparently little bit obsessed with my newest culinary discovery.  My article over on Forkful of News today is a review of two of Judith Jones books and now Im posting for your cooking pleasure one of my favorite recipes of hers.

Its just that shes a great writer, has had a jealousy inducingly interesting life and she also has amazing taste in food.  Most of the things the fella and I have eaten recently have come from her cookbooks.  She takes something simple like a steak or a curry and adds a little something extra to it that will make you rethink the way youve been cooking things all along.  And for someone like me who likes to know why something works instead of just being told what to do, I love that her recipes always include the reasoning  behind the instructions she provides.  I learned a lot about cooking just from reading her recipes.

Her book the Pleasure of Cooking For One was a lot of fun to cook out of the last time the fella was out of town.  She is a big proponent of cooking well for yourself and makings something special when youre alone, to make dinner a treat instead of a chore.  With that in mind she scales down huge feasts like Julia Childs Beef Bourguignon or tells you how to cook a whole duck and use every part of it to make meals for yourself for the week.

And the recipes are amazing, I ate really well that weekend while cooking alone.  I had scallops and butternut squash risotto and this lamb curry.  Both were somewhat fancy but very simple, I defiantly felt treated and enjoyed my food which is sometimes hard to do when youre alone.

I upped the scale on the portions from her original recipe to post here so that it makes dinner for two or dinner with left overs for the next day for one person.  Either way this is one of my new favorite curry recipes.  There is just something about lamb and curry that appeals to me and I could probably eat it everyday.

Simple Lamb Curry

4 tablespoon veggie oil
1 1/2 pounds lamb, cut into 1 inch piece
1 onion or 2 shallots, chopped
1/2 red pepper, diced
2 cloves garlic, chopped
1 teaspoon fennel seeds
4 tablespoons curry powder
salt and pepper
lemon juice, to taste
1 1/2 cup broth of your choice
2 tablespoons unsweetened shredded coconut
1 small tart apple, cut into wedges

In a frying pan over medium high heat add 2 tablespoons of the oil until warm. Add the lamb pieces to the pan without crowding them. Brown the meat on all sides briefly without burning the meat or cooking the meat all the way through. Once browned set the meat aside.

Add the the other 2 tablespoons of oil to the pan and saute the onion, pepper and garlic for about 8 minutes or until softened but not browned. Add the cooked lamb, fennel seeds, and curry powder. Salt the lamb lightly then squeeze several drops of lemon juice into pan. Add broth of your choice, cover pan and cook at a decent simmer for about 10 minutes or until the sauce thickens. Reduce the heat and add more liquid if it evaporates too quickly.

When the sauce is your desired consistency add the coconut and apple slices, tossing them in the pan for about 5 minutes to warm through. Taste the curry, re-season with salt, pepper and lemon juice as needed then serve over rice or with flourless naan.

Top 5 lifestyle changes to reduce cholesterol

Lifestyle changes can help reduce cholesterol, keep you off cholesterol-lowering medications or enhance the effect of your medications. Here are five lifestyle changes to get you started.
By Mayo Clinic staff
High cholesterol increases your risk of heart disease and heart attacks. You can reduce cholesterol with medications, but if youd rather make lifestyle changes to reduce cholesterol, you can try these five healthy lifestyle changes. If youre already taking medications, these changes can also improve their cholesterol-lowering effect.
1. Lose weight
Carrying some extra pounds — even just a few — contributes to high cholesterol. So losing as little as 5 to 10 pounds (about 2 to 5 kilograms) can help reduce cholesterol levels.
Start by taking an honest look at your eating habits and daily routine. Consider your challenges to weight loss — and ways to overcome them.
If you eat when youre bored or frustrated, take a walk instead. If you pick up fast food for lunch every day, pack something healthier from home. If youre sitting in front of the television, try munching on carrot sticks instead of potato chips as you watch. And, look for ways to incorporate more activity into your daily routine, such as using the stairs instead of taking the elevator. Take stock of what you currently eat and your physical activity level, and slowly work changes in.
2. Eat heart-healthy foods
Even if you have years of unhealthy eating under your belt, making a few changes in your diet can reduce cholesterol and improve your heart health.
§  Choose healthier fats. Saturated fats, found in red meat and dairy products, raise your total cholesterol and low-density lipoprotein (LDL) cholesterol, the "bad" cholesterol. As a general rule, you should get no more than 10 percent of your daily calories from saturated fat. Instead, choose leaner cuts of meat, low-fat dairy and monounsaturated fats — found in olive, peanut and canola oils — for a healthier option.
§  Eliminate trans fats. Trans fat can be found in fried foods and many commercial baked products, such as cookies, crackers and snack cakes. But dont rely on packages that are labeled "trans fat-free." In the United States, if a food contains less than 0.5 grams of trans fat per serving, it can be labeled "trans fat-free." Even though those amounts seem small, they can add up quickly if you eat a lot of foods that have a small amount of trans fat in them. Instead, read the ingredients list. You can tell if a food has trans fat in it if it contains partially hydrogenated oil.
§  Limit the cholesterol in your food. Aim for no more than 300 milligrams (mg) of cholesterol a day — less than 200 mg if you have heart disease. The most concentrated sources of cholesterol include organ meats, egg yolks and whole milk products. Use lean cuts of meat, egg substitutes and skim milk instead.
§  Select whole grains. Various nutrients found in whole grains promote heart health. Choose whole-grain breads, whole-wheat pasta, whole-wheat flour and brown rice.
§  Stock up on fruits and vegetables. Fruits and vegetables are rich in dietary fiber, which can help lower cholesterol. Snack on seasonal fruits. Experiment with veggie-based casseroles, soups and stir-fries. If you prefer dried fruit to fresh fruit, limit yourself to no more than a handful (about an ounce or two). Dried fruit tends to have more calories than does fresh fruit.
§  Eat foods rich in omega-3 fatty acids. Omega-3 fatty acids can help lower your LDL ("bad") cholesterol. Some types of fish — such as salmon, mackerel and herring — are rich in omega-3 fatty acids. Other good sources of omega-3 fatty acids include walnuts, almonds and ground flaxseeds.
3. Exercise on most days of the week
Whether youre overweight or not, exercise can reduce cholesterol. Better yet, moderate physical activity can help raise high-density lipoprotein (HDL) cholesterol, the "good" cholesterol. With your doctors OK, work up to 30 to 60 minutes of exercise a day. Remember that adding physical activity, even in 10-minute intervals several times a day, can help you begin to lose weight. Just be sure that you can keep up the changes you decide to make. Consider:
§  Taking a brisk daily walk during your lunch hour
§  Riding your bike to work
§  Swimming laps
§  Playing a favorite sport
To stay motivated, find an exercise buddy or join an exercise group. And remember, any activity is helpful. Even taking the stairs instead of the elevator or doing a few sit-ups while watching television can make a difference.
4. Quit smoking
If you smoke, stop. Quitting can improve your HDL cholesterol level. And the benefits dont end there. Just 20 minutes after quitting, your blood pressure decreases. Within 24 hours, your risk of a heart attack decreases. Within one year, your risk of heart disease is half that of a smoker. Within 15 years, your risk of heart disease is similar to someone who never smoked.
5. Drink alcohol only in moderation

Dieting To Lose Fat Does Not Work Here Is The Solution

What does "dieting" mean?
For just about all people, the term "dieting" means not eating the foods they love, eating smaller portions, and worst of all skipping meals. I hope we all know by now that dieting is hard and does not work for the long-term fat loss we all want.
Lets take a closer look at the 3 methods of dieting, the side effects, and the proper way to deal with your diet.

Not Eating The Foods You Love To Lose Fat
You probably love the same foods as me and most Americans, over- processed, high in fat and sugar, and oversized portions. We need those over sized portions because the food we are eating is not the nutrition our bodies need. They are just empty calories that our body stores as fat.

If you are trying to change your whole diet at once, that can be just as hard as quitting smoking. I tried and the side effects of cutting all sugar were quite painful. I lasted 3 weeks. The key here is to add a couple healthy things to your diet and cut back on the unhealthy stuff. An example would be to add fruit as a snack during the day instead of doughnuts but only every other day. Then add one more day of fruit a week with an occasional doughnut.

Whatever you do, do not call it cheating. You can only cheat while dieting, and that is not what you are doing. You are changing your diet to have better health, a lighter, thinner body, more energy, higher self-esteem, and the knowledge you are doing what is best for you and your family.

Eating Smaller Portions To Lose Fat
Leaving the table hungry is not the way to go. This is one of the things that make dieting very difficult. It will put you in a bad mood because you feel like you are punishing yourself for doing what you love, eating. After a few days of being hungry and weak, you rebel against yourself and eat a whole pizza by yourself. This leads to guilt and resentment and low self-esteem.

When changing your diet to nutritious foods, it is better to eat more often with smaller portions. There is a whole list of foods you can find that are healthy, low calorie and full of the nutrients your body needs. The more your body gets used to getting those nutrients, the less hungry you will feel. Personally, my favorite snack that keeps me away from the vending machine is cocktail peanuts.

I eat a handful about every hour and this event helps to eat a smaller lunch. That may be more than is recommended but I do have a labor intensive job that burns a lot of calories. I do still eat fast food on occasion, but it will just be one small sandwich off the value menu, such as a chicken sandwich.

Never get the fries!
So eating smaller portions of great tasting healthy foods will keep your metabolism going and the fat burning.

Skipping Meals To Lose Fat
Skipping meals is the worst dieting method you can do to lose fat. Eating food actually boosts the metabolism and keeps your body burning calories. This also gives you energy to do more with your day and burn more fat. When you skip meals bad things happen to your body. Your metabolism, the fat burning mechanism, slows down to conserve energy to keep your organs working. If you only eat once a day, your body will store just about the whole meal to keep your body going during the times of no new fuel. It stores this as fat.

For breakfast, I either drink a whey protein drink, about 170 calories, or eat a spinach salad, about 230 calories, but both give me a lot of energy, healthy unsaturated fats, vitamins and micro-nutrients for healthy body function.

Give yourself this one boost in the morning and you will see a difference.
If you find that you only like eating pastries or doughnuts for breakfast, try switching them out a couple days a week to start.

It will take time for your taste buds to adjust to your new diet. That is what the protein drink is for. My sweet chocolate fix for the day! Just remember that to lose fat, you want less carbs and more protein.

Look Ma My Bread is Famous

Photo by Steve Apps of the State Journal.

The interview I did with my foodie friend Lindsay for the local newspaper here in Madison just went up today.  As you may know May is Gluten Free Awareness month so she talked to me and a couple other people in the Madison gluten free community about our experience of going without wheat.  And the most important part of the whole thing of course was the food.

I cooked four different very photogenic loafs of bread that the papers photographer did a great job of capturing.  Ill post the recipe for the banana cardamom bread I reverse engineered from the fellas favorite gluteny recipe next week.  The other three recipes are from some of my favorite gluten free bloggers so be sure to check those out in the article as well.

It was a fun experience.  Now that people know what Im doing over here I better get back to some serious blogging.  But after all that baking I need some time off from making bread.  Im all breaded out.

What is P90X

Last night I heard a friend mention that he was going to try P90X to get back into shape.  Ive heard about P90X before but never really investigated whats involved in doing it.  It was still on my mind this morning so I decided to do some research... at 7:30am.  I know, Im insane!  I actually figured Id write a new blog while my hubby is still sleeping then maybe get in a quick workout of my own.  Im feeling ambitious this morning because my ketones are back where theyre supposed to be and Im still excited from yesterdays weigh-in results.  Got to use that motivation when youve got it!

So it turns out that P90X (or some form thereof) has been around since 2004.  So why the buzz now?  Im not sure if its being endorsed by a Kardashian or if theyve just upped their infomercial budget but it seems like its become very popular.  In visiting the P90X website, I could not find a single review that was negative.  Thats not terribly surprising.  If I were their marketing director I wouldnt want to approve negative reviews for the home page either.  But after visiting Amazon, I found that not all of their customers are quite so happy.  The vast majority had positive remarks for the workout program but there were many complaints about damaged discs and poor customer service and even quite a few comments reflecting my initial reaction to P90X:  Anyone who can dedicate 2 hours/day to working out for 90 days straight will get ripped, P90X or not.

I never understand how exercise programs become so popular and then ultimately fade away.  Remember Buns of Steel?  Or Sweatin to the Oldies?  Or Carmen Electras Fit to Strip?  Or Billy Blanks and Tae Bo?  I do.  I still own some of them.  Will P90X end up just being another workout that "used to be" popular, with all of the DVDs resting in storage totes 10 years from now?

As for me, Ill stick to my Wii Fit and the workout DVDs I already own.  Im not delusional enough to think that I could lose 112 lbs in 90 days and all of a sudden have 6 pack abs.  My journey on Medi-Weightloss is going to be a long one and while Id love to shorten it by adding in an intense workout every day... the reality for me is that I just dont want to workout for hours every day.  I want to relax after work and not feel obligated to anyone or anything but myself.  Because if I cant motivate myself enough to lose weight for my own health & future, then where would I be after those first 90 days of intense workouts?  Right back where I started.  So, this morning Ill channel my inner Tony Horton and challenge myself because its no one elses job but my own.

3rd Trimester All I Want Is Sleep!

I dont know how some pregnant women deal with being pregnant plus a highly demanding job. Im sure that my job is not nearly as tough as most and I have been struggling so much lately just making it through my days. There have been nights when I got home from work and either crashed on the couch or cried...

At the beginning of the month we ended up losing several of the employees in our department for various reasons. What this meant is that because Im one of the managers in our department Im expected to pick up some of the hours and responsibilities that those employees had. So for the past several weeks I have not only been working my job, but I am also working evenings/weekends/13 hour days/and Im back to driving the bus for doctors visits and outings. This wouldnt normally be a problem, but being in my 3rd trimester now you can imagine the toll it takes on me. Plus, keep in mind I dont really have a sit down job and am usually walking up to 4-6 miles per day. Im almost at the point where I question how much longer I can keep this up and I still have three months left for this baby to cook. Whats a girl to do? To top it all off... the state board of health made their appearance in our building at the beginning of the week which adds that much more stress to the mix. PHEW!

Anyways... the reason for the back story is to let you know Im still alive and kicking and to apologize once again for my lack of post these past few weeks. I have not felt well or had the energy to do any posts and they are backing up in my brain. Hoping to play some catch up over the weekend to fill you in on some recipes and other developments taking place in the Rhoton household...

Right now Im off to start my last 13 hour day this week... Thank you Lord!

Extreme Weight Loss Diets That Work Is Preparation Necessary

First of all, who is in charge? You or your food? Decide now how committed you are going to be in trying and extreme diet. The more committed and consistent you are, the faster and better results youll have.

There are necessary changes in your food choices that need to place. Make your decision now to go full out without looking back. Move forward while being in control of your habits and completely focused on your meal planning and preparation.

Set yourself up for weight loss success by limiting your involvement in other areas of your life. A good time to start is when your life is in balance. Choosing to switch to a new way of eating right before a wedding, in the middle of a move, or at the start of new job, probably are not the best times to change your food regime. It will be easier to keep organized if your life is at an even state without major life changes.

3 Things to know before you learn about extreme weight loss diets that work

1. Meal plan. Plan meals and snacks at least 2 weeks in advance. Planning will enable you to buy the necessary food for your meals.

2. Shopping list. Organize a shopping list for all of the foods, herbs, and spices you will need. Make sure your list is complete. If you are missing some items, it is easy to slip back into old habits because you were not prepared to eat what you had planned.

3. Prepare. Prep snacks and other meal items in advance. Cook double and save the rest for another day. Chop up fruits and veggies and place in easy to go bags or containers. Make a weeks worth of snacks.

3 Extreme Weight Loss Diets That Work

1. Sugar free. Sugar is an excellent food for fat cells. They love it and thrive on it. As soon as sugar is gone, the fat cells stop producing and the old ones melt away. Once off of sugar for at least 2 weeks, you will stop craving it as much. Check food labels for sugar or high fructose corn syrup. Beware of sugar filled beverages.

2. Raw food. A raw food diet eliminates sugar as well. Consuming mostly fruits and vegetables, you will gain energy while speeding up your metabolism.

3. Cleanse. A cleansing diet works quickly. This type only lasts for a week or so, it is not a lifestyle change. Although participating in a cleansing diet several times a year is very beneficial to your digestive tract. You will notice that bloating is significantly reduced.

Julia Child is a Cruel Mistress

This saucy pile of potatoes covered in fat and oil is so not diet friendly. Not for the Montignac Method, not for anyone. So I wont be posting the recipe here. Its just that after not posting for over a month I needed to get back into the swing of things. And after spending two days cooking this for a friends highly esoteric monk fish roasting party someone needed to see this madness.

So behold Salade Nicoise a la Julia Child. Or as I will be calling it from now on Bitch Salad.

It seems simple enough until youre boiling those potatoes you cant seem to convince your CSA to stop sending you every week, that your friends are sick of you pawning off on them. About then when its too late to turn back you really read the recipe and see it is three recipes hidden in a recipe for a freaking salad. Two different vinaigrettes and a potato salad? Seriously?

My potatoes committed some sort of explosive suicide while I was wire whipping (Julia is kind of kinky, I always thought of it as a whisk) the first vinaigrette. At which point I gave up and went to a wine tasting and thought about not cooking for awhile considering everything Ive tried to make this week was an epic failure.

My spirits were a little higher this afternoon when I skipped out of work half way through the day and gave the potatoes a stern talking to. They werent pretty and were over done but with the other vinaigrette coating them they were plenty tasty. I have to give it to Julia Child she is a huge picky fussbudget but its usually for a reason. That one bite of potato salad was the best Ive ever had and not just because I miss potatoes. It was delicious and subtle, with scallions making up most of the favor instead of the unfortunate cloying German mayonnaise and mustard version that is so popular.

The fun really started when I got to pile massive amounts of random vegetables and fish on the potato and lettuce bed. Im actually surprised at how tasty it looks. Hopefully the carb eaters of the world will enjoy it. If its a disaster after following all of Julias wacky instructions I really might make the fella take over the cooking. The one thing I can say for this recipe is it didnt ask me to taste raw eggs to check the seasoning which was an actual instruction last time I cooked out of Mastering the Art of French Cooking. Oh that Julia Child shes a character.

And the coleslaw recipe is

...GOOD!

I take that back, its GREAT!  Just made some of that Ginger Lime Coleslaw and it is delicious.  Waiting for the salmon to come out of the oven...
